I am sure there are many.  How ever for some of you that love carrot cake , you are unfortunate and cant have gluten.  The Gluten Free Carrot Cake Recipe below has no gluten in it.  Now a warning if you also have a nut allergy this recipe has walnuts and cashews in it.   This is a no bake cake, and can be made in minutes. There are other versions online, like this one,  but sometimes we prefer to give you simple. With this gluten free carrot cake you can now enjoy that taste we love in minutes, be gluten free, and if you check out the ingredients it is healthy.

Ingredients for Gluten Free Carrot Cake

  • 1 cup walnuts
  • 1 1/2 cups dates (soaked 30 mins and drained)
  • 3 cups grated carrots
  • 1tsp fresh grated ginger
  • 1tsp cinnamon
  • 1/2 tsp nutmeg
Ingredients for Cashew Cream Icing
  • 1 cup cashews
  • 1/4 cup honey
  • Juice and zest from one lemon

Directions for Gluten Free Carrot Cake

1. Place walnuts in a food processor and blend until crumbly
2. Add carrots, dates, ginger and spices and blend until well combined into a dough like mix
3. Shape into a cake shape and top with icing
Directions for Icing
1. Blend until smooth and whipped, adding a little water if needed to allow blending
2. Frost cake
