Healthy snowball cookies
Snowball cookies (part of the healthy dessert recipes) are absolutely the best thing since sliced bread. Ok not exactly but they are delicious. The writers for healthy dessert recipes decided to do some digging. We came up with healthy snowball cookies. As with anything we list the final product will depend on what you use. Healthy Snowball Cookies Ingredients
-8 Tablespoons of Earth balance butter, room temperature
-5 Tablespoons of regular butter
-3 Tablespoons of non fat Greek yogurt
-1/4 cup powdered sugar
-or 1/4 cup of powdered stevia
-or 1/4 cup of Powdered Coconut Sugar
-1 teaspoon of vanilla extract
-1/2 cup old fashioned oats (quick oats work also)
-3/4 cup all purpose flour
-1/4 cup whole wheat pastry flour
for a substitute for a gluten free flour mix.
-for those who wish to stay on this page or that gluten free flour mix
1 cup Rice flour
1/2 cup Tapioca flour
1/2 cup potato flour
3/4 cup sorghum flour
-1/4 teaspoon of sea salt
-1/4 teaspoon of cinnamon
-Crushed pecans or walnuts (preference)
-Powdered sugar, powdered stevia, or powdered coconut sugar for rolling
the cookies in after baking
Healthy Snowball Cookies cooking Instructions
-Preheat oven to 325 degrees.
-Line a baking sheet with a silpat mat or parchment paper.
-Beat the butter, Greek yogurt, powdered sugar, and vanilla extract in a stand mixer
-In a separate bowl whisk together the oats, flours, salt, and cinnamon (if using)
and the crushed pecans or walnuts.
-Add the dry mixture to the butter mixture and beat until everything is combined.
-Roll the dough into 1 inch balls and place them on the baking sheet.
-Bake at 325 degrees for 25-30 minutes.
-Cool the cookies on a wire rack.
-Once the cookies are cooled roll them in powdered sugar.
