Healthy Truffle Recipe

healthy truffle recipeThis Healthy truffle recipe is one of my new years resolutions this year because I wanted to do more healthy meal planning on the weekends .
Having healthy snacks around that we can grab whenever is really important. I find that if I don’t have anything healthy to snack on between meals, I will get quite hungry after a workout and then eat some not-so-healthy things that may be in the depths of my pantry. It’s not a pretty sight.
A favourite snack we’ve been having lately is healthy homemade truffles. I make them in all different flavours, but I want to share with you this really tasty one I’m loving. You too can enjoy this healthy truffle recipe by creating it yourself with the recipe below.

Healthy Truffle Recipe

Coconut Cashew Truffle 
Makes: 8 balls Ingredients
– 1 cup raw cashews
– 1 cup dried dates (I use medjool)
– zest of one orange
– 1/4 tsp cardamom
– 1/3 cup unsweetened coconut flakes (shredded coconut)
Directions
1. Combine all ingredients of this truffle recipe except coconut flakes in a food processor and process until all ingredients are broken down and well combined (mixture should be crust-like, and stick when pressed together).
2. Form into bite-sized balls.
3. Roll in coconut flakes (Note: It may help to dab balls with water if you are having trouble getting the coconut to stick!)
4. Enjoy!
