Maple Bacon Cookies
I have a crowd-pleasing recipe to share with you! another delicious healthy sweet that is part of our healthy dessert recipes. Since bacon is the new rage and everyone is posting bacon ideas. Here is one for you. It’s a  cookie that has bacon and maple syrup.  You can’t get more delicious than that!
In 2008 the writer of this one moved to New England from the south.  This is where he discovered real maple syrup.  He knew that bacon and syrup was absolutely the bomb, he thought why not Maple Bacon Cookies.
Now the kicker, these cookies are delicious and healthy. Wait, what? Yes they are healthy.

Maple Bacon Cookies
Makes 8 cookies
  • 1/4 cup + 1 tbsp almond flour (ground almonds)
  • 1/4 cup spelt flour (or GF flour)
  • 1 egg white or 1 egg yolk
  • 1/4 tsp pure vanilla extract
  • 1 tbsp + 1 tsp maple syrup
  • 1 tbsp coconut oil, liquefied
  • 6 dates, soaked for 1 hour, drained then chopped finely
  • 1/8 tsp + 2 pinches sea salt
  • 1 slice bacon, crisped and chopped (you can leave out if you don’t like bacon)
  1. Preheat oven to 350F
  2. Mix all wet ingredients in a bowl
  3. Mix all dry ingredients in another bowl
  4. ​Combine wet and dry ingredients
  5. Fridge dough for 10 minutes
  6. Drop spoonfuls of dough on a parchment-paper lined baking sheet and shape into cookies
  7. Bake at 350F for 10-12 minutes – cookies will be slightly soft, but harden up a bit when cooled
