paleo fudgeYou are going to love this Paleo Fudge. I’ve been on a bit of a Paleo kick lately. I have a friend who has been on a Paleo diet for months now and she swears it got her skin glowing and her digestion happy again. I can say that it really must be working for her because her complexion could not be more perfect!

Of course, I’ve been enjoying lots of Paleo desserts after hearty meals of meat and veggies and at first, because I was eating fewer carbs, my energy dropped, a bit, but after a few days I feel even more energetic!

If you’re looking to go Paleo, I’ve got something that might be of interest to you, especially if your goal is to lose weight, but before we get to that, let me share a super quick Paleo treat that I’ve been enjoying a lot of lately (maybe too much ;)…

It’s called Salted Almond Butter Fudge Squares and is a super easy 4 ingredient treat that gives you both salty and sweet.

And since it takes just 5 minutes to whip together, it’s perfect for me as my little girl is now scooting around everywhere and always getting into trouble.

These have been given two thumbs up by everyone who’s tried them. I’m not sure how many of these you’ll have to eat before you can get your skin to glow but it’s the effort that counts!

Paleo Fudge Salted Almond Butter Squares Ingredients

Makes about 20 squares

Ingredients
1 ½ cups raw smooth almond butter
¼ cup maple syrup
¼ cup + 2 tbsp coconut oil
½ tsp sea salt

Directions for preparing the Paleo Fudge

Lightly oil a 9×5” loaf pan and line with parchment paper
In a large bowl, add almond butter
In a small pot lightly heat over low heat – coconut oil, maple syrup, salt until oil is melted and all ingredients are combined
Slowly pour the pot ingredients into the almond butter bowl, stirring as you pour
Stir until completely smooth and combined (will still be runny)
Spoon the almond butter mixture into the loaf pan with a spatula and smooth out the top; you can sprinkle with more salt if you like
Place the pan uncovered in the freezer for about 1 hour or until the fudge is solid
Slice the fudge into 1 inch squares and serve immediately
