Why avocado oil in this Paleo Peach Cobbler
Avocados are high in fiber and contain more potassium than bananas. They also contain lots of monounsaturated fats – the kind of fat that is good for your heart. And not only are they good for eating, the oil is great for use as a moisturizer for your whole body.
- 2 pounds peaches, sliced
- 1¼ cup almond flour (ground almonds)
- ⅛ tsp sea salt
- 2 tbsp avocado oil
- 1 tbsp maple syrup
- ½ tsp pure vanilla extract
- Place peaches in a square 8×8 baking dish
- Combine almond flour and sea salt in a food processor
- Pulse in avocado oil, maple syrup, and vanilla
- Sprinkle the almond flour mixture over the peaches
- Bake at 350° for 35-45 minutes
- Remove from oven, then cool and serve
