This paleo peach cobbler recipe it to die for.  When most people think paleo they think blah, plain, tasteless. Well I got news for you it is not like that at all. It is absolutely delicious.

The number one key to this dessert is the avocado oil. Yes it is hard to find, unless you go to a specialty store, but not all carry it. If you do not have avocado oil you can find it on amazon. Why avocado oil in this Paleo Peach Cobbler

Avocados are high in fiber and contain more potassium than bananas. They also contain lots of monounsaturated fats – the kind of fat that is good for your heart.  And not only are they good for eating, the oil is great for use as a moisturizer for your whole body.

Baking with avocado oil, especially when a recipe calls for baking at high temperatures since avocado oil has a much higher smoking point than olive oil.
Avocado oil, depending on how refined it is, will not burn before it reaches a high temperature, somewhere between 490 degrees F and 520 degrees F. Olive oil, on the other hand, will burn at 410 degrees F.
Once the oil begins to smoke it creates free radicals which are very harmful to your health and are a major cause of many diseases. So for cooking and baking at high temperatures, make sure you choose an oil that has a high smoking point such as avocado oil or coconut oil.

Servings: 4
Ingredients
  • 2 pounds peaches, sliced
  • 1¼ cup almond flour (ground almonds)
  • ⅛ tsp sea salt
  • 2 tbsp avocado oil
  • 1 tbsp maple syrup
  • ½ tsp pure vanilla extract
Directions
  1. Place peaches in a square 8×8 baking dish
  2. Combine almond flour and sea salt in a food processor
  3. Pulse in avocado oil, maple syrup, and vanilla
  4. Sprinkle the almond flour mixture over the peaches
  5. Bake at 350° for 35-45 minutes
  6. Remove from oven, then cool and serve
