Spiced Rice Pudding

What do you do when you have a bunch of rice leftover after a meal? We make rice pudding at our house!
We love this spiced rice pudding using leftover rice. It takes just a couple minutes to put together and is cooked with warming Indian spices (it reminds me of Chai tea).
Spiced Rice Pudding


1 cup jasmine rice
1 ¾ cup coconut water (or use water if you don’t have)
Pinch of salt
½ cup raisins
1 egg, beaten
1 cup coconut milk
2 tbsp maple syrup
1 tsp pure vanilla extract
½ tsp cinnamon
½ tsp ground cardamom
Pinch of nutmeg
Pinch of cloves


1. Bring the rice, water, and salt to a simmer, cover, and turn to low to cook for 25 minutes or until just done
2. Meanwhile, combine the remaining ingredients in a medium mixing bowl with a whisk and set aside
3. When the rice is cooked, remove the lid and pour in the liquid ingredients. Cook, stirring constantly, over low-medium heat until it has thickened slightly. Do not boil or over cook as the egg will curdle.
4. Remove from heat and serve.
